We are happy to partner with Choi’s Kimchi Company in Portland to create this bold summer special. Choi’s traditional recipe comes from the founder Chong Choi’s village in Korea, where she learned the art of making kimchi as a child. Her lifelong passion for handcrafting fermented veggies in small batches turned into a beloved local family business here in the Pacific Northwest. Choi’s tangy, mildly spicy mix of fermented napa cabbage, daikon radish, onion, and chili pepper adds a delightful zing that pairs well with cool cucumbers, carrots, and avocado.
